Many general works on ukiyo-e, e g Richard Lane's Images from the Floating World (Oxford University Press 1978) or Richard Illing's The Art of Japanese Prints (1980, Omega Books 1984), contain at least samples of artists' signatures, date seals, censors' seals etc.
The most comprehensive books on these matters are, not surprisingly, in Japanese. The best work on date seals and censors' seals, that I am aware of, is Ishii Kend˘'s Nishiki-e no kaiin no k˘sh˘ (Tokyo, rev ed 1932, reprinted 1968). Most of the information on these seals, that you will find in European and American books, is probably derived - directly or indirectly - from Ishii Kend˘.
